Not much to blog today, spent the day with extended out-of-town family, doing typical summer things.  I did, however, find time to bake some zucchini bread (a family favorite).  When we have a garden, I love to plant zucchini.  We can’t get enough zucchini bread.  This year, my friend, Lisa gave me some out of her garden!  (Yum–Thanks, Lisa!!)  As you can see in the picture, even our dog, Chewy, can hardly wait for the bread to come out of the oven.  I am including the recipe, which also came from Lisa.  I have never found a better zucchini bread recipe….turns out perfect every time!!!!

2 cups sugar
1 cup oil
3 eggs
3 cups flour
1 1/2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
2 cups shredded zucchini (can drain off the extra liquid)
1 tsp. vanilla

Mix in the order given.  Spoon into 2 greased and floured loaf pans.  Bake at 350′ for 50-60 minutes.  Cool on rack and remove from pans.  (Can also make about 6 mini loaves, baking them for about 40 minutes.)
