ice cream cookie dessert

here’s an easy dessert recipe that i made on mother’s day!

Ice Cream Cookie Dessert


  • 1 (18 oz) package of Oreos, crushed & divided
  • 1/4 cup butter, melted
  • 1/2 gallon vanilla ice cream, softened
  • 1 (16 oz) jar of hot fudge ice cream topping, warmed
  • 1 (8 oz) carton of frozen whipped topping, thawed


  1. In a bowl, combine 3 3/4 cups cookie crumbs and butter. 
  2. Press into a greased 13 x 9 x 2 dish. 
  3. Spread with ice cream; cover and freeze until set.
  4. Drizzle fudge topping over ice cream; cover and freeze until set.
  5. Spread with whipped topping; sprinkle with remaining cookie crumbs.
  6. Cover and freeze for 2 hours or until firm.
  7. Remove from the freezer 10 minutes before serving.

Yield: 12 servings

scrapped this layout last night, in about 5 minutes.  (could have been the fact that i had 2 venti-sized starbucks in me…lol) 

i’ve been “saving” this vintage-looking postcard for a while and was thrilled to use it!

  • pom-pom ribbon
  • THICKERS–love’em!

i journalled about the fact that i love being at home. 

i never understood how my hubby was always content to be at home,

but now i do…..we are homebodies! 


those adorable feety pajamas

i found this picture from 1996. 

nick was about 2 1/2 then. 

i just loved those feety pajamas.  he was so snuggly in them. 

time goes too fast. 

of course i used some more THICKERS on my layout. 

for the sunday scrappin challenge: use something 3-D in a layout. 

i used the leaves and added a red button to resemble a holly berry. 

my to-do’s:

  • i have a gift i want to bake, using an altered oatmeal container as the gift holder.
  • i played with my binditall yesterday…working on a mini album for this summer…need to work on the cover…want to have it ready for the last day of school and the first day of summer break.

my ta-da’s:

  • this layout is my only layout for the last few days. 
  • however, i did clean up my scrap-room last night.  i can see the floor!

it was a bit chilly out today, but i managed to finish planting my mini-garden and planted many flowers around the house.  i always plant red flowers, to match our front door.  but today, everywhere i looked i saw beautiful purple flowers.  they were just begging to be planted at our house.  so, i went with different shades of deep purple and white.  hopefully they bloom & look beautiful! 

well, i better keep moving….laundry….ironing…treadmill…dishes….all of it is waiting for me!  enjoy your sunday!

had some fun scrapbooking last night. 

i’ve been wanting to scrap some lyrics from my favorite songs.

i decided to do an 8.5 x 11 for an album that i have. 

of course i used some of my current faves: THICKER STICKERS, martha stewart bird punch, & my scalloped edge punch

happy mother’s day! 

my guys spoiled me with all of my faves this weekend. 

friday, they had ordered my favorite cookie bouquet for me.  yum! 

saturday, they let me sleep in and then took me to my favorite ice cream place for supper.  yum! 

then today, my son had given me a MD card that he made for me along with a $20 bill (from his own pocket) so that i could go to starbucks today and get my favorite drink and snack.  yum! 

so, after church, before going to my parents’ house for lunch, they took me to starbucks….. 

i bought my favorite drink and an ooohhhhhhh soooooo yummy old-fashioned glazed cake donut. 


needless to say, by they time i remembered to snap a picture, i had eaten half of the donut already. 

ok.  so i’ll admit it, i had almost eaten half of the donut just walking to the car.  lol. 

(notice any scary similarities in all of my favorite gifts?  sugar???? yikes!) 

my hubby hid my MD card in the laundry room….i laughed and told him that it’s a good thing i like laundry….if he had hidden it near the toilet cleaner, it could have been another month before i found it.  lol!!!! 

i love them. 

i have been very blessed. 

we struggled with infertility before and after having Nick.  he is our only child and a true gift from God.  i am very thankful that God allowed me to be a mother.

the picture is from a small town near us, where my favorite ice-cream place is. 

as a special mother’s day treat, they took me there for supper.  as we were driving through town, we saw this old building that looked like a great backdrop for a picture….so…of course, i hopped out of the car and my sweet hubby snapped some pix. 

the one below is “old-school”…i think i love that one too!!!!
