flip-flop faves

fabulous fun fact: my flip-flop faves ok. 

so, i have never been able to wear flip-flops….at least not comfortably. 

normal flip-flops drive me crazy! that little thing between my toe is just awful. 

until–

i found these.

I LOVE THEM! 

yes, they are a bit more costly than your typical flip-flops…average around $32…unless they are on sale… 

but believe me 

they are TOTALLY worth it!!!!  

i bought the khaki & teal ones last year and wore them A LOT!  and they are still in fabulous shape!

hello navy blue!!! 

but i still have my eyes on these adorable green ones–GREEN!!!!

{my 2009 prayer journal}

have you seen this? if  you are a paper-junkie, like me,

you will loooooove these yummy journals. 

they are from ecojot, 100% recycled paper. 

i received one for Christmas and i have been saving it. when i have a big, fat, blank, new notebook, you can’t just use it for any willy-nilly thing. 

i wait until i can use it for something ‘good’.  something other than just ‘paper’. 

i finally realized the perfect solution. {my 2009 prayer journal} 

one of my favorite memories is the summer that nick & kevin got their tonsils out on the same day and the following month of recuperating. 

not because of what they went through, but because at the time, i was faithful in my daily devotions and prayer time. 

i kept a prayer journal for quite a while, (and have numerous ones from different times), but this particular prayer journal, from that period of time, is the most dear to me.  i wrote specific prayers in it, pouring out my requests to God.  then, as my prayers were answered, (not always what i asked for, but with God’s will), i would record God’s answers to my prayers. 

when you can look back over a period of time and see how amazing God is,

how He loves us and is always there for us,

and He not only hears our prayers,

but answers them…..it is an amazing feeling!!

i long to feel that close to God again. 

to keep track of answered prayers. 

to be able to see specifically how God has worked in my life…day after day… 

i am excited! 

i look forward to 2009 and walking with God, spending time daily with Him. 

a year of refocus & renew. 

i challenge YOU to do the same!

tasty recipes

that’s right. i baked a cake in my crockpot, (slow cooker). 

i had been looking through some of my cookbooks and found this recipe. 

i wanted to use what i had on hand already, so i adjusted it slightly….i have included that in the recipe. 

the cake consistency was incredibly light and airy.  i was really surprised that it worked.  in fact, my hubby came home from work and asked what was in the crockpot….i told him i was baking a cake and he replied “no way”.  (to which i answered “yes way”)….. 

anyways,   

here’s the recipe:

Cherry Upside-Down Cake

Ingredients:

  • 6 egg whites
  • 1/2 cup applesauce ( i used a peach-flavored individual applesauce)
  • 1 cup water
  • 1 box dry yellow cake mix (i used a pineapple upside-down flavored box mix) (do not follow box directions)
  • 1 (21 oz) can light cherry pie filling

Directions:

  1. Preheat slow cooker on high.
  2. Spray the slow cooker with non-fat cooking spray.
  3. In a mixing bowl with a mixer on medium speed beat the egg whites, applesauce, water, and cake mix together for two minutes, scraping the sides of the bowl occasionally.
  4. Spread the pie filling in the bottom of the slow cooker.
  5. Pour the prepared cake batter on top of the pie filling.
  6. Place a paper towel on top of the slow cooker.  Place lid of the slow cooker on the paper towel.
  7. Cook on high for 1 3/4 to 2 hours or until a knife inserted in the middle of the cake comes out clean.  ( i lifted the lid after a little more than an hour and the paper towel was laying in the batter, because it had risen to the top….i removed the paper towel entirely for the last half an hour and it finished out great.)
  8. Remove the crock from the slow cooker.  Remove the lid and the paper towel, and let it cool for 10-15 minutes.
  9. Run a knife around the outside edge of the cake to loosen it from the slow cooker.
  10. Place a large serving plate with an edge (so the pie filling won’t overflow off the plate) upside down on the top of the slow cooker.  Holding the slow cooker and the plate firmly together, carefully flip the cake upside down.  It will be steamy hot so be very careful.  The pie filling will ooze down the sides of the cake.
  11. Serve hot or chilled.

so, that’s all i have for today!  cold weather makes me want to bake.  we also tried another new recipe for supper, Gourmet Chicken Pizza, which we liked also….i found that recipe on www.allrecipes.com  (both recipes are peanut-free, for those with peanut allergies) 

i have lots of scrapping that i would like to accomplish.  american idol to watch.  treadmill to walk.  devotions to have.  neighborhood newsletter to compose and edit. 

ohhhhh and today is the 14th, so tonight at midnight is the monthly release of new products at my favorite, papertreyink.com or check out the fun on her blog

the good news, school is cancelled for tomorrow because of the snow and bitter temperatures….sleeping in tomorrow!!! 

refocus & renew

i’ve been thinking a lot about something that ali edwards mentioned in her blog.

choosing a word for 2009. 

a word that sums up what you want for yourself this coming year. 

i thought this would be easy.  i thought a word would just jump out at me. 

but it didn’t.  i’ve been thinking about it…looking up words…scriptures etc…. 

i finally narrowed it down to two. 

refocus & renew

2008 was a year that i really focused on getting healthy.  losing weight.  exercising.  making healthy eating choices. 

but one thing that always got pushed to the bottom of my to-do list, was my quiet time wtih God. 

in 2009, i would like to refocus my energy and renewing my relationship with Christ. 

daily making the choice to create time to spend alone with him. 

of course these words can also be applied to other areas of my life also, but i really want my main focus to be on Him.  knowing that, when we put our eyes on Christ, everything else should fall into place. 

  • Psalm 51:10  “Create in me a clean heart, O God; and renew a right spirit within me.”
  • Romans 12:2  “And be not conformed to this world: but be ye transformed by the renewing of your mind, that ye may prove what is that good, and acceptable, and perfect, will of God.”
  • Isaiah 40:31  “But they that wait upon the LORD shall renew their strength; they shall mount up with wings as eagles; they shall run, and not be weary; and they shall walk, and not faint.”

in order to encourage this change, i have found a few challenges that i am going to do.

it’s more than just a resolution. 

what will be your focul point this year?? 

a year counting

that’s me.  using the poor man’s plastic surgery.  ha ha ha.

can’t believe it, but it’s been a year that i have been counting calories. 

i use www.my-calorie-counter.com .  i love it! 

my original goal was to lose about 15 pounds….as of now, i have lost almost 30!!! 

it keeps me accountable. 

it is easy using an online journal.  i opt to pay the $5 a month for additional options. 

i never felt like i was ‘missing out’ on my favorite sweets or starbucks….i would just figure those calories into my daily allowance. 

i also walk on the treadmill, (while lifting weights)….i try to do it daily, but occasionally miss a day here or there, (especially during the holidays).  online, you can even account for the amount of time exercised and how many calories are burned during that time. 

that’s all. 

just thought i would mention it.  it worked for me and i enjoy it.

yes, i bought another one

ok.  ok. 

so, i have a slight problem with resisting those cute mugs at starbucks. 

i know. 

i know! 

my cupboard is already overflowing…mugs and glasses pressed against the cupboard door…

hoping not to fall out once someone opens the door. 

i know already!! 

but i did it. 

i couldn’t resist. 

it had been a mug that i had seen before the holidays.  loved it.  wanted it. 

so cute with names of the special holiday drinks printed on it. 

nice and bright and cheery with it’s red inside. 

today, my hubby & son took me out-of-town shopping and there i saw it. 

sitting in the basket on the floor. 

shouting “here i am!  over here!  i’m even on sale!!!!!” 

well, that’s all it took. 

i reached in. 

scooped it up. 

held it in my cold little hands while i waited in line,

so proud to place it on the counter. 

as if it had been waiting for me. 

(it could have been my caffeine-induced stupor….2 venti (that means large for those anti-starbuck people)  non-fat caramel macchiatos BOTH with an extra shot of espresso….but that’s beside the point….) 

(extra fun shopping day!  Christmas money to spend at Archivers & Target!!!! soooo dangerous!!!!)
